Day 84 of San Francisco Shelter in Life ★ Brewing home-made KOMBUCHA

It's Day 84 of San Francisco Shelter in Place order.  Do you know what KOMBUCHA is?  It's a fermented drink mixture of yeast and bacteria.  Yep it sounds pretty weird but it's very good for you!  I used to find them at health food stores but now I can find everywhere including Costco!  It's very popular in the US.  I buy them sometimes from Costco.  My friend who started home brewing Kombucha gave me Scoby (symbiotic culture of bacteria and yeast) which is "mother" to make every batch of Kombucha.  So I started home brewing KOMBUCHA, too!  After 8~9 days, my first fermentation was done.  New Scoby was in my jar and it was pretty cool!

I think many Japanese people drink at this point, but I wanted to drink fizzy fruity flavors so I bottled them with berries for the second fermentation.  I am looking forward to tasting the results.  It will be ready in 2~3 days (I think).  Since Scoby is alive, I named my Scoby "miss Sun".  My friend got Scoby from her friend and I got mine from my friend ... that means 3rd generation scoby.  In Japanese, 3 is pronounced "san" or "sun"...she is mother of KOMBUCHA so "miss" "sun".

Good KOMBUCHA is pricy but home made KOMBUCHA is pretty reasonable.  I can enjoy them everyday soon.  KOMBUCHA is good for your gut health and more!
